Stuffed fried anchovies

Ingredients

12 big anchovies, 80 g smoked ham, 150 g mozzarella cheese, 2 eggs, 100 g bread-crumbs, 100 g flour, salt, frying oil.


Preparation
Clean the anchovies well, taking their heads off and de-boning them after opening in two half. Wash the fishes in salted water. Cut the mozzarella cheese and the smoked ham in slim slices in order to put a one slice of each in every single anchovy. Close the anchovies. In a large bowl whip the two eggs and mix the bread-crumbs and the flour in a dish. Twist the anchovies in the eggs and then flour them on both sides. Preheat the oil in a large pan and fry the fishes turning them on the other side when half cooked. Drain them on paper towels, put on a dish and salt if you prefer. Serve.
